One weekend, I decided to experiment with pastries using fresh orange juice. I chose to start with waffles. I had recently learnt to make cottage cheese waffles, and I thought a citrus twist could be interesting. So I squeezed the juice of a fresh orange and topped up the remaining liquid with milk. The result was delicious.
Cottage cheese waffles are protein‑rich, creamy, and contains fewer calories compared to standard waffles. The fresh orange juice adds a subtle but nice flavour .
For this recipe, I use a 1:1 ratio of cottage cheese to all‑purpose flour, which creates light, slightly crisp but tender waffles .
This recipe makes eight, 5‑heart‑shaped waffles (or equivalent in another waffle iron).
Ingredients
- 150 g full‑fat cottage cheese
- 150 g all‑purpose flour
- 2 medium eggs
- 150 ml freshly squeezed orange juice
- 100 ml milk
- 40 g melted salted butter
- A dash of pure vanilla essence
Instructions
- In a blender or hand mixer, combine the cottage cheese and eggs until smooth and creamy.
- Add the orange juice, milk, and vanilla essence. Blend until combined.
- Add the flour and mix until the batter is smooth. The mixture should be fairly light in consistency.
- Pour the batter into a mixing bowl and stir in half of the melted butter. Reserve the other half for greasing your waffle iron.
- Allow the batter to rest for 10 minutes.
- Preheat your waffle iron, grease lightly with the remaining butter, and scoop in the batter.
- Cook the waffles until golden brown—or crisp them up longer if you prefer.
