Multigrain Bread / Grovbrød

I deeply enjoy baking and find it incredibly relaxing. One of my favourite moments when baking is when the  kitchen is filled with the smell of freshly baked goods. Baking a multigrain bread adds an extra layer to that experience. The seeds and grains adds a warm, nutty aroma to the smell.


Over time, this bread has become my favourite. It’s nutty, hearty, and far healthier than the usual soft white sandwich breads. It makes tasty sandwiches.
My recipe is adapted from the grovbrød recipe by Trine and makes one loaf of bread. 
The bread is prepared in two steps


Step 1 Ingredients


30 g pumpkin seeds 
30 g sesame seeds
30 g linseeds (flax)
30 g oat bran
30 g sunflower seeds
75 g coarse rye flour
75 g coarse whole wheat flour
300 ml milk


Step 2 Ingredients
2 medium eggs
2 tablespoons honey
300 g all‑purpose flour
1 tablespoon yeast
90 g butter
1 teaspoon salt
1 teaspoon grated nutmeg

Linseeds (flax)

Oats bran

Oats

Pumpkin seeds

Rye flour

Sesame seeds

Sunflower seeds

Whole wheat flour


Procedure

  1. Start by mixing all the Step 1 ingredients in a bowl. Cover and let it rest for about an hour. This soaking time softens the grains and helps everything bind into the dough later.
  2. In a mixer (or with your hands), combine the Step 2 ingredients except the butter, and add the mixture from step 1. Knead until smooth, then add the butter and continue kneading until fully incorporated. The dough becomes silky and elastic at this stage.
  3. Place the dough in a greased bowl, cover it, and let it rise until doubled. Depending on your kitchen, this can take an hour or more.
  4. Gently punch down the dough, shape it, and transfer it to your bread pan.
  5. Brush the top lightly with water and sprinkle on any seeds you like. I usually choose oats and pumpkin seeds and gently press them in with the brush so they stay put after baking. 



  6. Let the shaped dough rise again for about an hour.
  7. Bake in a preheated oven at 180°C for around 45 minutes.
  8. The loaf is ready when it has a beautiful golden colour.
